My Grandma Emma used to can peaches and tomatoes and beans every single summer. I remember that. I was there many times when she baked cakes, but only a few times when she canned. It always amazed me that she was so resourceful and could accomplish so much in the dark. Grandma Emma was blind, but that did not stop her from being her truly creative self. I may never learn all the things she managed to do in that little kitchen of hers, but my girls and I are working on jams and jellies. We started out with the strawberry jam we made after our annual visit to the strawberry patch. Each year we add something different. Peach preserves, bread and butter pickles, scuppernong jelly, pear sauce, pear preserves and fig preserves are a few of the goodies we've tried. Stick around to see how we make them.
